yasai yakitori
tasty and light dish to accompany any meal , these grilled vegetable skewers are brushed with yakitori sauce yum!!.. you can find this recipe in ‘the wagamama cookbook’
you need
- 180ml (6fl oz) light soy sauce
- 6 tablespoons sake
- 6 button mushrooms
- for yakitori sauce:
- 2 tablespoons vegetable oil
- 6 bamboo skewers, soaked in cold water for 2 hours
- salt and white pepper
- 1 orange pepper, trimmed, deseeded and cut into 2.5cm (1in) chunks
- 2 tablespoons yakitori (see below) sauce
- 1 courgette, cut into 2.5cm (1 in) slices
- 3 thick spring onions, bulb end only, cut into 2.5cm (1 in) chunks
- 6 cherry tomatoes
- 1 tablespoon caster sugar
- 6 tablespoons mirin (sweetened sake used for cooking)
instructions
thread 1 piece of vegetable per skewer so each skewer contains 5 pieces. brush each skewer lightly with vegetable oil and season with salt and white pepper
heat a heavy-bottomed frying pan or griddle over a medium heat for 1 – 2 minutes until hot and almost smoking. cook the skewers, turning frequently, for 4 – 5 minutes until golden brown
drain on kitchen paper to remove excess oil. brush with yakitori sauce and serve immediately
for yakitori sauce, combine all the ingredients in a small pan and gently heat to dissolve the sugar. set aside to cool. it will keep indefinitely in the fridge
